High Protein Breakfast Bake

Who says you can't have chocolate for breakfast?!


Meet my latest creation I'm having almost every morning these days - high protein breakfast bake. This recipe serves 4, so great for meal prep. I take this one away with me too as it's easy to eat on the go or when you're on holiday.



Ingredients:
  • 1 cup ground linseed - 180gm

  • 1 courgette grated, liquid squeezed out

  • 1/2 cup cacao powder

  • 1tsp baking powder

  • Pinch salt

  • 2 squares dark chocolate (chopped)

  • 120gm protein powder of choice (I like chocolate)

  • 1 cup egg white

  • 1 1/4cup soy milk (organic is best)



Method:
  • Turn your oven on to 170c

  • In a large mixing bowl add all your ingredients and stir together until well combined. Mixture should be moist but not sloppy. If too dry add a bit more milk.

  • Line a 20 x 20cm baking pan with baking paper and pour the mixture in. Smooth with the back of a large spoon and bake for 25 minutes or until it looks baked on top and a skewer should come out relatively clean.

  • Leave to cool for 5 – 10mins and chop into four pieces. This freezes really well too, simply defrost when you want to eat it. Could be chopped into smaller bars and had as a sweet treat/protein snack in the afternoon or after dinner!

  • Serve with a dollop of yoghurt and some berries.
