Almond Butter Cookies

It's about time these went on the blog - I've been obsessing over them for ages and I've been sharing them with clients (with smiles all round!) and I need to put them somewhere so I don't have to keep re-sharing the same recipe!
I think these are best kept in the freezer and whipped out when you feel like a sweet treat. I often break them in half and munch on one while I have my cup of tea or am getting dinner ready in the afternoons (ssshhh.... don't tell anyone. But that's the time of day I really feel like something sweet!).
The beauty of these is that they have all these added goodies to keep blood sugar stable, whilst satisfying the sweet tooth.
Ingredients:
1 cup almond butter
1 cup almond meal
1/4 cup coconut sugar
1 tbsp maple syrup
1/4 cup melted coconut oil
1 large egg
1 tsp vanilla extract
2 tbsp hemp seeds
1/4 shredded coconut
1/4 tsp baking soda
1/4 tsp sea salt
100gms dark chocolate - chopped
Method:
Preheat oven to 175 degrees celsius.
Mix all ingredients into a large bowl until well incorporated.
Line a baking tray with baking paper and scoop 1.5 tbsp of mixture into a ball and onto the baking tray. Flatten slightly; these won't spread so whatever shape you put them in is how they'll generally turn out.
Bake for 12 minutes (watch them) or until golden.
Allow to cool before freezing or eating as they can crumble if eaten too quickly out of the oven!
